Yogurt Cake with Lime Sugar Glaze


Yogurt cake with a lime sugar glaze. Fluffy and delicious yogurt cake topped with a smooth and citrusy lime glaze. A quick and easy recipe with simple ingredients that takes only a few minutes to make!

Ingredients:
For the Cake:
  • 1 1/2 cups (180g) All-Purpose Flour
  • 2 tsp (8g) Baking Powder
  • 1/4 tsp (1g) Salt
  • 1 cup (240g) Plain Yogurt at room temperature
  • 2 Large Eggs at room temperature
  • 2/3 cup (133g) Granulated Sugar
  • 1/4 cup (60ml) Vegetable Oil
  • 1/2 tsp Vanilla Extract (optional)
For the Lime Sugar Glaze:
  • 1 1/4 cups (160g) Powdered Sugar
  • About 3 Tbsp (45ml) Freshly Squeezed Lime Juice

Directions:
For the Cake:
  1. Line an 8in (20cm) square pan with parchment paper, leaving a 2in (5cm) overhang over two sides for easy lifting. Set aside.
  2. Preheat the oven to 350°F (180°C).
  3. In a large bowl, sift the flour, baking powder, and salt. Whisk to combine. Set aside.
  4. In a blender, place the yogurt, eggs, sugar, oil, and vanilla. Blend for about 2 minutes.
  5. Pour the mixture over the dry ingredients and, using a wire whisk, mix until just combined. Do not overmix the batter. Otherwise, the cake will be dense.
  6. Spread the batter evenly into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool completely at room temperature.
For the Lime Sugar Glaze:
  1. In a medium bowl, place the powdered sugar and 2 tablespoons of lime juice. Stir until well combined. The mixture will be very thick.
  2. Add the third tablespoon, a bit at a time, stirring after each addition until it forms a smooth glaze. Make sure the glaze isn’t too liquid or runny (otherwise, it won’t set properly).
  3. Pour the glaze over the cake and spread evenly all over the top.
  4. Sprinkle lime zest on top and let the cake stand at room temperature for about 40 minutes or until the glaze is completely set.
  5. Unmold the cake, cut into squares and serve.
  6. You can store this cake in an airtight container at room temperature for up to 3-4 days.
