Ingredients:
For the Cake:
- 1 1/2 cups (180g) All-Purpose Flour
- 2 tsp (8g) Baking Powder
- 1/4 tsp (1g) Salt
- 1 cup (240g) Plain Yogurt at room temperature
- 2 Large Eggs at room temperature
- 2/3 cup (133g) Granulated Sugar
- 1/4 cup (60ml) Vegetable Oil
- 1/2 tsp Vanilla Extract (optional)
For the Lime Sugar Glaze:
- 1 1/4 cups (160g) Powdered Sugar
- About 3 Tbsp (45ml) Freshly Squeezed Lime Juice

For the Cake:
- Line an 8in (20cm) square pan with parchment paper, leaving a 2in (5cm) overhang over two sides for easy lifting. Set aside.
- Preheat the oven to 350°F (180°C).
- In a large bowl, sift the flour, baking powder, and salt. Whisk to combine. Set aside.
- In a blender, place the yogurt, eggs, sugar, oil, and vanilla. Blend for about 2 minutes.
- Pour the mixture over the dry ingredients and, using a wire whisk, mix until just combined. Do not overmix the batter. Otherwise, the cake will be dense.
- Spread the batter evenly into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely at room temperature.
For the Lime Sugar Glaze:
- In a medium bowl, place the powdered sugar and 2 tablespoons of lime juice. Stir until well combined. The mixture will be very thick.
- Add the third tablespoon, a bit at a time, stirring after each addition until it forms a smooth glaze. Make sure the glaze isn’t too liquid or runny (otherwise, it won’t set properly).
- Pour the glaze over the cake and spread evenly all over the top.
- Sprinkle lime zest on top and let the cake stand at room temperature for about 40 minutes or until the glaze is completely set.
- Unmold the cake, cut into squares and serve.
- You can store this cake in an airtight container at room temperature for up to 3-4 days.
