Directions:
Cake:
  1. Grease with butter (or cooking spray) and dust with flour a 10″ x 4.5″ (26 x 11cm) loaf pan. Set aside.
  2. Preheat the oven to 350°F (180°C).
  3. In the bowl of an electric mixer fitted with the whisk attachment, place the eggs, sugar, and butter. Beat on medium speed for about 3 minutes.
  4. Add the milk and vanilla. Beat for a few seconds to combine.
  5. Note: You can make this batter using a wire whisk. It may look a bit curdled at this step, but don’t panic. The batter will be smooth after adding the flour.
  6. Sift the flour, baking powder, and salt over the mixture. Stir with a wire whisk until just combined. Do not overmix the flour.
  7. Pour about half of the batter into another bowl. Add the cocoa powder and stir until just combined.
  8. Spread the vanilla batter into the bottom of the pan and gently spoon the cocoa batter on top. Create some swirls using a skewer or small knife. Just be careful not to overmix the colors.
  9. Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
  10. Let it cool for 20 minutes and unmold the cake, then let it cool completely at room temperature before adding the ganache frosting.
Chocolate Ganache:
  1. In a medium bowl, place the chopped chocolate and milk.
  2. Microwave in 30-second intervals, stirring after each until melted.
  3. If the ganache is too runny, place it in the fridge for a few minutes until firm enough to spread.
  4. Spread the ganache over the cake and serve.
  5. Store the cake in an airtight container at room temperature for up to 5 days.
