Vanilla Chocolate Chip Muffins


Vanilla Chocolate Chip Muffins Recipe. Learn how to make these soft, fluffy, and delicious vanilla muffins filled with chocolate chips. An easy recipe that does not require an electric mixer and takes only a few minutes to make!

Ingredients:
  • 1 Large Egg at room temperature
  • 1/2 cup (120g) Plain Yogurt
  • 2 tsp (10ml) Vanilla Extract
  • 1/3 cup (75g) Unsalted Butter (melted and cooled to room temp)
  • 1 1/4 cups (155g) All-Purpose Flour
  • 2 tsp (8g) Baking Powder
  • 1/4 tsp (1g) Salt
  • 3/4 cup (150g) Granulated Sugar
  • 2/3 cup (110g) Mini Chocolate Chips

Directions:
  1. Line a muffin pan with 8 or 9 paper liners. Set aside.
  2. Preheat the oven to 350°F (180°C).
  3. In a medium bowl, place the egg. Whisk for about 1 minute using a wire whisk.
  4. Add the yogurt, vanilla, and butter. Whisk until well combined. Set aside.
  5. In a large bowl, sift the flour, baking powder, salt, and sugar. Add the chocolate chips and stir the dry ingredients until well combined. Make sure to coat all the chocolate chips with flour.
  6. Pour the wet ingredients mixture over the dry ingredients and stir gently with a spatula until just combined. Do not overmix the batter.
  7. Divide the batter evenly among the paper liners, making sure to fill them about 3/4 full. Place some chocolate chips on top.
  8. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Let them cool for a few minutes and transfer the muffins to a wire rack to cool completely.
  9. Store the muffins in an airtight container at room temperature for up to 5 days.
