The fluffiest cake you will ever eat! This chocolate cake is so moist and fluffy it melts in your mouth! And I will tell you the secret to making this delicious, quick, and easy dessert!

Ingredients:
For the Cake:
- 1 cup (125g) All-Purpose Flour
- 1/4 cup (25g) Unsweetened Cocoa Powder
- 2/3 cup (135g) Granulated Sugar
- 1 tsp (4g) Baking Powder
- 1/2 tsp (3g) Baking Soda (it reacts with the vinegar and helps the cake to rise)
- A pinch of salt
- 1 Large Egg at room temperature
- 1/4 cup (55g) Vegetable oil (any flavorless vegetable oil like canola, corn, sunflower)
- 1 tsp (5g) Vanilla Extract
- 2 tsp (10g) White Vinegar or Lemon Juice
- 1 cup (240g) Coca-Cola at room temperature
- 1/2 cup (120g) Coca-Cola at room temperature (to moisten the cake)
For the Frosting:
- 180g (about 1 + 1/4 cups) Semi-Sweet Chocolate, chopped or chips
- 3 Tbsp (45g) Coca-Cola at room temperature

For the Cake:
- Grease with butter an 8in (20cm) square pan or baking dish. Set it aside.
- Preheat the oven to 350°F (180°C) for about 5 minutes before baking the cake.
- In a large bowl, sift the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk until combined.
- Using a spatula, create a well in the dry ingredients. Place the egg, oil, vanilla, vinegar, and coca-cola (1cup) into the well.
- Stir gently with a wire whisk, as little as you can, until just combined. We don’t want to lose the air bubbles.
- Pour the batter into the prepared pan. Bake for about 20 minutes or until a toothpick inserted into the center comes out clean. Time may vary depending on the oven.
- Let it cool completely to room temperature.
- Using a skewer or a fork, poke holes all over the cake. Slowly pour 1/2 cup of coca-cola over the cake and let it absorb the liquid for a few minutes before adding the frosting.
- Important: I do not recommend making this cake for a layer cake because it’s so fluffy it won’t have the proper structure.
For the Frosting:
- Melt the chocolate using a double boiler or microwave in 30-second intervals, stirring after each until smooth.
- Add 3 tablespoons of coca-cola (at room temperature). Mix with a wire whisk until smooth and shiny.
- If the mixture is too thin, you can let it sit at room temperature for a few minutes, stirring occasionally until the desired consistency.
- Spread the frosting over the cake and sprinkle some chocolate sprinkles on top.
- Store the cake in an airtight container at room temperature.
