Ingredients

For the Cake:

  • 4 large eggs at room temperature
  • 1 cup (240g) Orange juice (no water or sugar added)
  • 1/3 cup (80g) Vegetable oil (any flavorless vegetable oil, like canola, corn, or sunflower)
  • 1 cup (200g) Granulated sugar
  • 1 Tbsp Orange zest (only the orange peel, not the white pith)
  • 2 cups (240g) All-purpose flour
  • 2 tsp (8g) Baking powder
  • 1/4 tsp (1g) Salt

For the Syrup:

  • 1 cup (240g) Orange juice (no water or sugar added)
  • 2 Tbsp (25g) Granulated sugar

Instructions

For the Cake:

  1. Start by greasing an 11x8-inch (28x20cm) cake pan with butter or cooking spray. Alternatively, a 9x9-inch (23x23cm) square cake pan will do. Just remember to avoid using a pan with a removable bottom to prevent any syrup from seeping out. Set the pan aside
  2. Preheat the oven to 350°F (180°C) about 5 minutes before baking the cake. 
  3. Place the eggs, orange juice, vegetable oil, and sugar in a blender. Mix for about 2 minutes until smooth. 
  4. Pour the mixture into a large bowl. Add the orange zest and whisk to combine. 
  5. Sift the flour, baking powder, and salt over the mixture. Stir until just combined. Don’t overmix the flour. 
  6. Pour the mixture into the prepared pan and bake for about 25 minutes or until a toothpick inserted into the center comes out clean. Time may vary depending on the oven. 
  7. Allow the cake to cool completely in the pan. 

For the Syrup:

  1. Combine the orange juice and sugar in a saucepan. Cook over medium heat until it starts to boil. 
  2. Turn off the heat and allow the syrup to cool before adding to the cake. 
  3. Cut the cake into 12 squares within the cake pan (This will ensure that the syrup moistens each piece of cake equally). 
  4. Slowly pour all the syrup over the cake and let it sit at room temperature for about 1 or 2 hours. The cake will absorb the syrup. 
  5. You can store the cake at room temperature for a day. After that, it's best to refrigerate it. Just remember to take it out of the fridge about 30 minutes before serving.
