Quick and Easy Cinnamon Apple Cake Recipe. This easy-to-make soft and fluffy cinnamon cake is filled with diced apples and drizzled with a powdered sugar glaze. So yummy and delicious!

Ingredients:
For the Cake:
- 2 Eggs at room temperature
- 3/4 cup (150g) Granulated Sugar
- 1/2 cup (120ml) Vegetable Oil
- 1 tsp (3g) Cinnamon
- 1 1/3 cups (166g) All-Purpose Flour
- 2 tsp (8g) Baking Powder
- 1/4 tsp (1g) Salt
- 2 medium Apples
For the Sugar Glaze:
- 2/3 cup (85g) Powdered Sugar
- About 1 1/2 Tbsp Milk

For the Cake:
- Line an 8-inch (20cm) square pan with parchment paper. If you don’t have parchment paper, you can grease the pan with butter and dust flour. Set aside.
- Preheat the oven to 350°F (180°C).
- In a large bowl, place the flour, baking powder, and salt. Stir to combine. Set aside.
- Peel, core, and dice the apples. Add them to the dry ingredients and stir until all the pieces are coated with flour. Set aside.
- In a blender, place the eggs, sugar, oil, and cinnamon. Blend for about 1 minute. You can use an electric mixer for this step.
- Pour the mixture over the flour-coated apples and stir gently until just combined. Do not overmix the flour.
- Spread the batter evenly into the prepared pan. Bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Let it cool at room temperature and unmold the cake.
For the Sugar Glaze:
- Place the sugar in a small bowl. Add 1 tbsp of milk and stir. Add the remaining milk a bit at a time, stirring after each time, until it forms a smooth glaze. You can add a bit more milk to achieve the desired consistency, if necessary.
- Drizzle the glaze over the cake and let it sit at room temperature for 20-30 minutes to set.
- Cut into squares and serve.
