Quick and Easy Blueberry Muffins


Quick and easy blueberry muffins recipe. A fluffy and moist vanilla muffin full of blueberries and white chocolate chips. Topped with a crisp oat flour crumble. So yummy and delicious!

Ingredients:
For the Muffins:
  • 1 Large Egg at room temperature
  • 1/2 cup (120g) Plain Yogurt at room temperature
  • 1/3 cup (80ml) Vegetable Oil
  • 1 tsp (5ml) Vanilla Extract
  • 1 1/2 cups (185g) All-Purpose Flour
  • 3/4 cup (150g) Granulated Sugar
  • 2 tsp (8g) Baking Powder
  • 1/4 tsp (1g) Salt
  • 3/4 cup (115g) Fresh or Frozen Blueberries (if using frozen blueberries, do not thaw them)
  • 1/2 cup (80g) White Chocolate Chips
For the Crumble Topping:
  • 1/3 cup (30g) Oat Flour (or all-purpose flour)
  • 1/4 cup (50g) Granulated Sugar
  • 2 Tbsp (28g) Unsalted Butter at room temperature

Directions:
For the Muffins:
  1. Line a muffin pan with 9 paper liners. Set aside.
  2. In a medium bowl, place the egg. Using a wire whisk or fork, mix the egg for about 1 minute.
  3. Add the yogurt, oil, and vanilla. Whisk until well combined. Set aside.
  4. In a large bowl, place the flour, sugar, baking powder, and salt. Stir to combine the dry ingredients.
  5. Add the blueberries and white chocolate chips. Stir gently with a spatula until they are all coated with flour.
  6. Pour the wet ingredients and stir until just combined. Stir gently, being careful not to crush the blueberries and stain the batter blue.
  7. Preheat the oven to 350°F (180°C).
  8. Fill each liner about 3/4 full with batter. Set aside.
For the Crumble Topping:
  1. In a medium bowl, place the oat flour, granulated sugar, and butter. Using a fork, mix the ingredients until it forms a crumbly mixture.
  2. Sprinkle the crumbles on top of each muffin.
  3. Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean. Try to insert the toothpick where is only cake (otherwise, it will come out stained by the blueberries).
  4. Let them cool for 5 minutes, then transfer the muffins to a wire rack to cool completely at room temperature.
