Quick and Easy Banana Crumble Cake


Quick and Easy Banana Crumble Cake Recipe (no mixer needed). Learn how to make this fluffy vanilla cake, filled with bananas and chocolate chunks, topped with a crunchy and delicious oat flour crumble.

Ingredients:
For the Cake:
  • 1 cup (125g) All-Purpose Flour
  • 1/4 cup (50g) Granulated Sugar
  • 1 1/2 tsp (6g) Baking Powder
  • 1/4 tsp (1g) Salt
  • 1 Large Egg at room temperature
  • 1/4 cup (60ml) Milk
  • 1/4 cup (60ml) Canola Oil
  • 1 tsp (5ml) Vanilla Extract

For the Filling:
  • 3 Large Bananas (very ripe)
  • 1 Tbsp (15ml) Lemon Juice
  • 4oz (113g) Chocolate, chopped into large chunks
For the Crumble:
  1. 3/4 cup (75g) Oat Flour
  2. 1/3 cup (65g) Granulated Sugar
  3. 1/2 tsp Ground Cinnamon
  4. 1/4 cup (55g) Unsalted Butter at room temperature

Directions:
For the Cake:
  1. Line an 8-inch (20cm) square pan with parchment paper. Set aside.
  2. In a large bowl, sift the flour, sugar, baking powder, and salt. Whisk to combine and set aside.
  3. In a medium bowl, place the egg. Using a wire whisk, mix for about 1 minute. Add the milk, oil, and vanilla. Whisk until well combined.
  4. Pour the mixture over the dry ingredients. Stir until just combined. Do not overmix the batter.
  5. Spread the batter into the bottom of the prepared pan. Set aside.
  6. Preheat the oven to 350°F (180°C).
For the Filling:
  1. Peel the bananas and cut them into 1/2-inch rounds.
  2. Pour Lemon juice on top and stir. The lemon juice will prevent them from browning.
  3. Place the bananas evenly over the top of the batter.
  4. Sprinkle chocolate chunks on top. Set aside.
For the Crumble:
  1. In a medium bowl, place the oat flour, sugar, cinnamon, and butter.
  2. Using a fork, mix the ingredients until it forms a crumbly mixture.
  3. Sprinkle the crumble evenly over the bananas and chocolate chunks.
  4. Bake for about 30 minutes until a toothpick inserted in the center comes out clean or until it starts to brown on top.
  5. Let the cake cool completely before cutting into squares.
  6. Store in an airtight container at room temperature for up to 3 days.
