Ingredients
- 1/2 cup (113g) Unsalted butter at room temperature (softened)
- 2/3 cup (135g) Granulated sugar
- 2 Tbsp of Orange zest (only the orange peel, not the white pith)
- 1 large egg at room temperature
- 2 Tbsp (30g) Freshly squeezed orange juice
- Orange food coloring gel (optional)
- 1 1/2 cups (180g) All-purpose flour
- 1/2 tsp of Baking soda
- A pinch of salt
- Powdered sugar for coating
Instructions
- Combine the butter, sugar, and orange zest in a large bowl. Stir with a spatula until soft and creamy.
- Add the egg, orange juice, and food coloring (optional). Stir to combine. The mixture will look curdled, but it will be smooth again after adding the flour.
- Sift the flour, baking soda, and salt over the mixture. Gently stir with a spatula until just combined and smooth. Don’t overmix the flour.
- Refrigerate the dough for about 1 or 2 hours or until firm enough to roll into balls.
- Line a large baking sheet with parchment paper.
- Preheat the oven to 350°F (180°C) for about 5 minutes before baking the cookies.
- After chilling, portion the dough using a one-tablespoon cookie scoop. Roll it using the palms of your hands, and then roll it in powdered sugar to coat.
- Place the balls in the prepared pan, leaving a space between them.
- Bake for about 12 minutes or until lightly brown at the bottom.
- Allow the cookies to cool for about 5 minutes, and transfer them to a cooling rack.
- You can store them in an airtight container at room temperature for 3-4 days.
