Ingredients

  • 150g (about 1 cup) White chocolate, chopped or chips
  • 1/2 cup (113g) Unsalted butter
  • 1/2 cup (100g) Granulated sugar
  • 2 large eggs at room temperature
  • 1 tsp (5g) Vanilla extract
  • 1 cup (120g) All-purpose flour, sifted
  • 1/2 cup (75g) Chocolate chips

Instructions

    1. Line an 8-inch (20cm) square baking pan with parchment paper and set aside.
    2. Preheat the oven to 350°F (180°C) for about 5 minutes before baking the brownies.
    3. Place the white chocolate and butter in a large bowl and melt in a double boiler or microwave in 30-second intervals, stirring until smooth.
    4. Stir in the sugar until well combined, then let it cool for a few minutes before adding the eggs.
    5. Gently whisk in the eggs and vanilla with a wire whisk, being careful not to overmix and incorporate too much air into the batter.
    6. Add the flour and stir just until combined. Don't overmix.
    7. Fold in the chocolate chips and stir to distribute them evenly.
    8. Pour the batter into the prepared pan and sprinkle some chocolate chips on top. Bake for about 20 to 25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
    9. Refrigerate for at least 1 or 2 hours before cutting into squares.
