No-Bake Mini Chocolate Cheesecakes Recipe. These easy-to-make cheesecakes are delicious and full of chocolate flavor. They have a crunchy graham cracker crust, filled with creamy chocolate cheesecake and topped with ganache. A quick, easy, and delicious dessert!

Ingredients:
Crust:
- 5oz (140g) Graham Crackers or Digestive Biscuits (about 1 1/2 cups)
- 1/3 cup (75g) Unsalted Butter
Chocolate Cheesecake Filling:
- 5oz (140g) Semi-Sweet Chocolate, chopped
- 8oz (226g) Cream Cheese at room temperature
- 1/4 cup (32g) Powdered Sugar
- 1 tsp (5ml) Vanilla Extract
Chocolate Ganache:
- 4oz (113g) Semi-Sweet Chocolate, chopped
- 1/4 cup (60ml) Heavy Cream (bring to room temperature)

Crust:
- Using a food processor or blender, grind the cookies into fine crumbs.
- Melt the butter using a double boiler or microwave for 30 to 40 seconds.
- Pour the melted butter into the graham cracker crumbs and mix well.
- Line a muffin pan with 12 paper liners. Divide the crumb mixture evenly among them and firmly press into the bottom of each paper liner using a 1/4 measuring cup or a small glass cup.
- Refrigerate 15 minutes while making the filling.
- Note: If you want to make just one pie, use a 7in (18cm) round springform pan.
Chocolate Cheesecake Filling:
- Melt the chocolate using a double boiler or microwave for 30-second intervals, stirring after each until smooth. Let it cool completely at room temperature.
- In a medium bowl, place the cream cheese, powdered sugar, and vanilla. Whisk until smooth.
- Pour the melted chocolate into the cream cheese mixture and whisk until well combined.
- Divide the filling between the 12 liners.
- Refrigerate for about 20 – 30 minutes.
Chocolate Ganache:
- In a medium bowl, place the chopped chocolate and heavy cream. Melt using a double boiler or microwave in 30-second intervals, stirring after each until smooth.
- Spread the ganache over the top of each mini cheesecake.
- Refrigerate for at least 2 hours. Keep refrigerated until serving time.
