No-Bake Ferrero Rocher Cheesecake


No-Bake Ferrero Rocher Cheesecake Recipe. A delicious gluten-free hazelnut crust filled with a tasty and easy-to-make cheesecake filling full of chocolate and Nutella; topped with more Nutella and Ferrero Rocher. A perfect dessert for a special occasion!

Ingredients:
Hazelnut Crust:
  • About 1/2 cup (75g) Semi-Sweet Chocolate, chopped
  • 3 Tbsp (42g) Unsalted Butter
  • 1 1/2 cups (185g) Roasted Hazelnuts
Filling:
  • About 1 1/4 cups (180g) Semi-Sweet Chocolate, chopped
  • 1 cup (226g) Full Fat Cream Cheese at room temperature
  • 2/3 cup (200g) Nutella at room temperature
Topping:
  • 1/3 cup (100g) Nutella
  • 12 Ferrero Rocher (8 whole and 4 cut in half)

Directions:
Hazelnut Crust:
  1. Grease with vegetable oil a 7in (18cm) round pan with removable bottom. Do not use butter, or the cheesecake will stick to the pan after being refrigerated. Set it aside.
  2. In a medium bowl, place the chocolate and butter. Melt using a double boiler or microwave in 30-second intervals, stirring after each until smooth. Set it aside.
  3. Place the hazelnuts in a food processor and process until coarsely ground. Add the chocolate mixture and process until well combined.
  4. Spread the mixture evenly into the bottom and up the sides of the prepared pan (about 1in or 2,5cm).
  5. Refrigerate for about 20 minutes while making the filling.
Filling:
  1. Melt the chocolate using a double boiler or microwave in 30-second intervals, stirring after each until smooth. Let it cool for a few minutes.
  2. In a large bowl, place the cream cheese, Nutella, and melted chocolate. Using an electric mixer, beat until well combined and smooth. Note: make sure to use the ingredients at room temperature. If the cream cheese is cold, it will harden the chocolate, and the filling will end up with chocolate lumps.
  3. Spread the filling evenly over the hazelnut crust. Refrigerate for about 20 minutes.
Topping:
  1. Place the Nutella in a small bowl and microwave it for about 15 seconds. Stir to loosen it up and make it more spreadable.
  2. Spread the Nutella evenly on top of the cheesecake and decorate with Ferrero Rocher, alternating between one whole and one half.
  3. Refrigerate for at least 4 hours or until serving time.
