Directions:
Chocolate Pudding:
  1. Grease about 6 small serving dishes (5fl.oz or 145ml) with vegetable oil. Do not use butter because as butter solidifies in the fridge, it will stick the pudding to the sides of the ramekin.
  2. In a small bowl, pour the water and sprinkle the powdered gelatin on top. Stir until completely dissolved. Let it stand at room temperature for a couple of minutes to bloom. The gelatin will absorb the water. Set aside.
  3. In a medium bowl or jug, pour the warm milk. Add the cocoa powder and, using a wire whisk, mix until completely dissolved.
  4. Add the bloomed gelatin and whisk until well combined. Make sure to use warm milk. The heat of the milk will help to dissolve the cocoa powder and melt the bloomed gelatin.
  5. Stir in the condensed milk and heavy cream until well combined.
  6. Pour the mixture into the serving dishes (preferably through a sieve to remove any lumps).
  7. Refrigerate for at least 4 hours or overnight.
Chocolate Sauce:
  1. In a medium bowl, combine the honey and cocoa powder. Whisk to combine. If the mixture is thick, add about 1/2 tbsp of milk and whisk until it forms a smooth and shiny sauce.
  2. Carefully slide a small spatula or knife around the edges between the pudding and the serving dish. Unmold and place them onto serving plates. Drizzle chocolate sauce on top and serve.
  3. You can also serve the puddings in the serving dishes rather than unmolding them onto a plate.
