Ingredients:
Base:
- 1/4 cup (55g) Butter, salted or unsalted
- 1/4 cup (85g) Honey
- 1/4 cup (50g) Brown Sugar
- 1 tsp Vanilla Extract
- 1/4 tsp Salt
- 1 3/4 cups (170g) Rolled Oats
- 1/3 cup (55g) Roasted Almonds, chopped or sliced
Chocolate Peanut Butter Fudge:
- 10oz (280g) Semi-Sweet Chocolate, chopped (about 1 3/4 cups)
- 1 cup (250g) Creamy Natural Peanut Butter at room temperature

Base:
- Line an 8in (20cm) square pan with parchment paper, leaving a 2in (5cm) overhang for easy lifting. Set aside.
- In a medium microwave-safe bowl place the butter, honey, brown sugar, vanilla, and salt. Microwave for 40 seconds and stir until completely melted. Set aside.
- In a large bowl, place the rolled oats and almonds. Pour the melted butter mixture into the bowl and stir with a spatula until the rolled oats are fully coated.
- Firmly press the mixture into an even layer on the bottom of the prepared pan. Refrigerate for 20 minutes while making the fudge.
Chocolate Peanut Butter Fudge:
- In a medium bowl, place the chopped chocolate. Melt using a double boiler or microwave in 30-second intervals, stirring after each until smooth.
- Let the melted chocolate cool at room temperature for about 5 minutes.
- Add the peanut butter and stir until well combined.
- Pour the mixture into the pan and spread evenly over the base.
- Sprinkle some chopped roasted almonds on top.
- Refrigerate for about 20 minutes or until firm enough to cut into squares and serve.
- For a creamier texture, let the bars sit at room temperature for about 20 minutes before serving.
