No-Bake chocolate biscuit cake


No-Bake chocolate biscuit cake! If you are looking for an easy dessert recipe, you should definitely try this quick and easy egg-free chocolate cake without an oven! A chocolaty, rich dessert made with biscuits and creamy chocolate buttercream.

Ingredients:
  • 220g (about 1 1/2 cups) Semi-sweet chocolate, chopped
  • 1/2 cup (45g) Unsweetened cocoa powder
  • 1/2 cup (120g) Hot water
  • 1 cup (226g) Unsalted butter, at room temperature
  • 2 cups (270g) Powdered Sugar
  • 1/4 tsp (1g) Salt
  • 1 tsp (5g) Vanilla Extract
  • About 9oz (250g) Plain Biscuits
  • 1/2 cup (120g) Milk at room temperature
  • Chocolate Sprinkles

Directions:
  1. Melt the chocolate using a double boiler or microwave in 30-second intervals, stirring after each until smooth. Let it cool to room temperature (otherwise, the chocolate will melt the mixture when added to the butter). Note: make sure to use a good quality couverture chocolate.
  2. In a medium bowl, place the cocoa powder and hot water. Stir until completely dissolved. Let it cool to room temperature.
  3. In the bowl of an electric mixer fitted with the paddle attachment, place the butter and vanilla. Sift the powdered sugar and salt over the butter. Start by mixing on low speed and increase the speed to medium-high. Beat for a few minutes until light and fluffy.
  4. Add the melted chocolate and mix until combined. Then add the dissolved cocoa powder and mix just until smooth. Note: make sure to add the melted chocolate first and then add the cocoa mixture. Otherwise, the buttercream may split.
Assembling:
  1. Spread a thin layer of frosting at the bottom of the baking dish. Quickly dip the biscuits into the milk, one at a time, and arrange them evenly into the bottom of the baking dish. Spread one layer of frosting over the cookie biscuits. Repeat the process, creating other layers and finishing with a layer of frosting. Sprinkle chocolate sprinkles on top.
  2. Keep the cake refrigerated and remove it from the fridge about 30 minutes before serving.
