Neapolitan Cake Recipe. A soft and delicious cake that has three different flavors: chocolate, vanilla, and strawberry. It’s easier to make than it looks since you need only one batter to make this beautiful three-color cake.

Ingredients:
- 3 large eggs at room temperature
- 1 cup (200g) Granulated Sugar
- 1/3 cup (80ml) Vegetable Oil
- 2/3 cup (160g) Plain Yogurt
- 2 cups (250g) All-Purpose Flour
- 2 tsp (8g) Baking Powder
- 1/4 tsp (1g) Salt
- 1/2 tsp Vanilla Extract
- 1 tsp Strawberry Gelatin
- 1 Tbsp Cocoa Powder
- Powdered Sugar for dusting

- Line a loaf pan with parchment paper, leaving a 2in (5cm) overhang lengthwise for easy lifting. Loaf pan size: 4 x 10in (10 x 25cm) and 2in (5cm) deep.
- Preheat the oven to 350°F (180°C).
- In a large bowl, place the eggs and sugar. Beat with an electric mixer on medium speed for about 3 minutes.
- Add the vegetable oil and yogurt. Mix for about 10 seconds until just combined.
- Sift the flour, baking powder, and salt over the mixture. Using a wire whisk, stir gently until just combined. Do not overmix the flour (over-beating the batter will develop gluten and result in a dense cake).
- Divide the batter evenly among three bowls (about 1 cup of batter per bowl).
- Add vanilla to the first, gelatin to the second, and cocoa powder to the third bowl. Stir gently until just combined.
- Spread the chocolate batter lengthwise on one side of the prepared pan. Then spread the strawberry batter on the other half.
- Place spoonfuls of vanilla batter on top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool for about 20 minutes. Unmold the cake and let it cool completely at room temperature.
- Sift some powdered sugar on top and serve.
- Store the cake in an airtight container at room temperature for up to 5 days.
