Modeling milk recipe. If you’re looking for an alternative for modeling chocolate or fondant to decorate cakes and cupcakes, try making this quick and easy modeling milk paste. It’s made with simple ingredients and tastes better than fondant (also known as sugar paste).

Ingredients

  • 1 cup (100g) Whole Milk powder (fine powder, not granulated)
  • 1/3 cup (45g) Powdered sugar (icing sugar)
  • 1/2 tsp Vanilla extract
  • 115g (about 1/3 cup + 1 Tbsp) of Sweetened condensed milk

Instructions

  1. Combine the milk powder and powdered sugar in a large bowl. Stir to combine. 
  2. Important: make sure the milk and sugar are very fine powders. Don’t use granulated sugar, or the paste will be grainy. 
  3. Add the vanilla, then add the condensed milk, a bit at a time, kneading until it forms a dough. Wash your hands occasionally to make sure the dough isn’t sticking to your hands.
  4. Wrap the dough in plastic wrap to prevent it from drying when you’re not using it. 
  5. You can use food coloring gel to create different colors. 
  6. If you want to roll out the dough, I recommend you place it between two sheets of parchment paper greased with vegetable oil or cooking spray. Spread the cooking spray all over the parchment paper using a paper towel to prevent the dough from sticking. 

Notes

Store the modeling milk paste wrapped in plastic wrap in an airtight container at room temperature for up to 2 days. If it gets too dry, add a bit of condensed milk and knead the dough on the counter dusted with powdered sugar.
