Healthy cookies recipe (gluten-free). A delicious and healthy cookie made with dry roasted peanuts, oats, and cocoa powder, full of white chocolate chips. If you are celiac, make sure to use certified gluten-free oats.

Ingredients:
- 3/4 cup (100g) Dry Roasted Peanuts, unsalted
- 1/2 cup (50g) Rolled or Instant Oats*
- 1 Large Egg
- 1/2 tsp Vanilla Extract
- 1/2 cup (80g) Loosely Packed Brown Sugar
- 3 Tbsp (22g) Unsweetened Cocoa Powder
- 1 tsp (4g) Baking Powder
- 1/3 cup (55g) White Chocolate Chips (optional)

- Place the roasted peanuts and oats in the bowl of a food processor and pulse until finely and evenly ground. Set aside. *If you are celiac, make sure to use certified gluten-free oats.
- In a large bowl, place the egg, vanilla, and brown sugar. Whisk until well combined.
- Add the processed ingredients (peanuts and oats), cocoa powder, and baking powder. Stir with a spatula.
- Add the chocolate chips and stir.
- Preheat the oven to 350°F (180°).
- Line a large baking sheet with parchment paper. Grease the paper with butter. These cookies have no added fat, so make sure to grease the parchment paper to ensure the cookies won’t stick.
- Scoop the dough onto the prepared baking sheet using a regular spoon. Leave at least two inches between each cookie.
- The dough will be a bit sticky, so you can wet a clean spoon or the tip of your fingers with water to lightly press the top and smooth the edges of the cookies.
- Bake for about 15 minutes.
- Let the cookies cool and set completely before removing them from the baking sheet.
