Healthy Chocolate Peanut Butter Bars Recipe


Healthy chocolate peanut butter bars recipe! You can never go wrong when pairing chocolate with peanut butter! You’ll love these no-bake creamy and delicious bars topped with a thick layer of chocolate.

Ingredients:
For the Dough:
  • 3/4 cup (185g) Natural peanut butter (no sugar or fat added)
  • About 6 Medjool dates (pitted)
  • 1/4 tsp Vanilla extract (optional)
  • About 1/3 cup (30g) Almond flour
For the Chocolate Coating:
  • 80g (about 1/2 cup) Semi-sweet chocolate, chopped or chips
  • 2 Tbsp (30g) Natural peanut butter at room temperature

Directions:
For the Dough:
  1. Line an 8x4in (20x10cm) loaf pan with wax paper or parchment paper. Set it aside. If you don’t have a loaf pan, you can use any small container (like a 5.5in or 14cm square container).
  2. Place the peanut butter, pitted Medjool dates, and vanilla in a food processor. Pulse and process until it forms a creamy mixture.
  3. You can add more Medjool dates if you like a sweeter dessert.
  4. Add the almond flour and process until well combined, scraping down the sides of the container when needed.
  5. You can add more almond flour if the dough is too soft or add more peanut butter if the dough is too crumbly. Just make sure to form a thick dough that holds its shape.
  6. Transfer the dough to the prepared pan and press with the back of a spoon to flatten it and smooth the top. Refrigerate for about 30 minutes.
For the Chocolate Coating:
  1. Melt the chocolate using a double boiler or microwave in 30-second intervals, stirring after each until smooth.
  2. Add the peanut butter and stir until well combined.
  3. Pour the chocolate coating over the peanut butter layer and smooth the top. Place a few dollops of slightly warm peanut butter on top and create swirls using a skewer or small knife.
  4. Refrigerate for about 2 hours or until firm.
  5. Unmold the peanut butter bar and cut into squares using a hot knife for a cleaner cut.

Store them in an airtight container in the fridge for up to a week.
