Directions:
For the Dough:
- Line an 8x4in (20x10cm) loaf pan with wax paper or parchment paper. Set it aside. If you don’t have a loaf pan, you can use any small container (like a 5.5in or 14cm square container).
- Place the peanut butter, pitted Medjool dates, and vanilla in a food processor. Pulse and process until it forms a creamy mixture.
- You can add more Medjool dates if you like a sweeter dessert.
- Add the almond flour and process until well combined, scraping down the sides of the container when needed.
- You can add more almond flour if the dough is too soft or add more peanut butter if the dough is too crumbly. Just make sure to form a thick dough that holds its shape.
- Transfer the dough to the prepared pan and press with the back of a spoon to flatten it and smooth the top. Refrigerate for about 30 minutes.
For the Chocolate Coating:
- Melt the chocolate using a double boiler or microwave in 30-second intervals, stirring after each until smooth.
- Add the peanut butter and stir until well combined.
- Pour the chocolate coating over the peanut butter layer and smooth the top. Place a few dollops of slightly warm peanut butter on top and create swirls using a skewer or small knife.
- Refrigerate for about 2 hours or until firm.
- Unmold the peanut butter bar and cut into squares using a hot knife for a cleaner cut.
Store them in an airtight container in the fridge for up to a week.
