Healthy Chocolate Muffins


These easy and Healthy Chocolate Muffins are super simple to make and taste delicious! Made with simple ingredients; no refined sugar, no added fat, and gluten-free! Perfect for breakfast or an afternoon snack!

Ingredients:
  • 2 Eggs at room temperature
  • 1/4 cup (60g) Plain Yogurt at room temperature
  • 1/4 cup (85g) Honey
  • 1 tsp (5g) Vanilla Extract
  • 1 cup (90g) Oat Flour + 1 Tbsp (for coating the chocolate chips)
  • 3 Tbsp (20g) Unsweetened Cocoa Powder
  • A pinch of salt
  • 1 1/2 tsp (6g) Baking Powder
  • 1/3 cup (53g) Chocolate Chips + 2 or 3 Tbsp (for topping)

Directions:
  1. Line a muffin pan with 6 or 7 paper liners (it may vary depending on the size of the paper liner).
  2. In a small bowl, place the chocolate chips. Add 1 tbsp of oat flour and stir. Set it aside.
  3. Preheat the oven to 350°F (180°C).
  4. In a large bowl, place the eggs. Using a wire whisk, mix the eggs for about 1-2 minutes.
  5. Add the yogurt, honey, and vanilla. Whisk until well combined.
  6. Sift the oat flour, cocoa powder, salt, and baking powder over the mixture. Whisk until just combined. Note: if you are celiac, make sure to use certified gluten-free oat flour.
  7. Stir in the chocolate chips coated with oat flour.
  8. Fill the paper liners with batter (about 3/4 full) and place some chocolate chips on top.
  9. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. Do not overbake them.
  10. Let the muffins cool for about 5 minutes and transfer them to a wire rack to cool completely.
  11. Store them in an airtight container at room temperature for up to 3 days.
