These easy and Healthy Chocolate Muffins are super simple to make and taste delicious! Made with simple ingredients; no refined sugar, no added fat, and gluten-free! Perfect for breakfast or an afternoon snack!

Ingredients:
- 2 Eggs at room temperature
- 1/4 cup (60g) Plain Yogurt at room temperature
- 1/4 cup (85g) Honey
- 1 tsp (5g) Vanilla Extract
- 1 cup (90g) Oat Flour + 1 Tbsp (for coating the chocolate chips)
- 3 Tbsp (20g) Unsweetened Cocoa Powder
- A pinch of salt
- 1 1/2 tsp (6g) Baking Powder
- 1/3 cup (53g) Chocolate Chips + 2 or 3 Tbsp (for topping)

Directions:
- Line a muffin pan with 6 or 7 paper liners (it may vary depending on the size of the paper liner).
- In a small bowl, place the chocolate chips. Add 1 tbsp of oat flour and stir. Set it aside.
- Preheat the oven to 350°F (180°C).
- In a large bowl, place the eggs. Using a wire whisk, mix the eggs for about 1-2 minutes.
- Add the yogurt, honey, and vanilla. Whisk until well combined.
- Sift the oat flour, cocoa powder, salt, and baking powder over the mixture. Whisk until just combined. Note: if you are celiac, make sure to use certified gluten-free oat flour.
- Stir in the chocolate chips coated with oat flour.
- Fill the paper liners with batter (about 3/4 full) and place some chocolate chips on top.
- Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. Do not overbake them.
- Let the muffins cool for about 5 minutes and transfer them to a wire rack to cool completely.
- Store them in an airtight container at room temperature for up to 3 days.
