Ingredients
For the Cake:
- 2 Eggs at room temperature
- 1 cup (240g) Plain yogurt at room temperature
- 1/3 cup (110g) Honey
- 1/4 cup (55g) Coconut oil or melted butter
- 1 tsp (5g) Vanilla extract
- 1 cup (90g) Almond flour
- 1 1/2 cups (135g) Oat flour
- 1 1/2 tsp (6g) Baking powder
- A pinch of salt
- 1/2 cup (80g) Chocolate chips (you can use sugar-free chocolate)
For the Chocolate Frosting:
- 100g (about 2/3 cup) Semi-sweet chocolate, chopped or chips (you can use sugar-free chocolate)
- 1/3 cup (85g) Natural peanut butter (no added sugar or fat)
Instructions
For the Cake:
- Line an 8-inch (20cm) square pan with parchment paper. Set it aside.
- Preheat the oven to 350°F (180°C) for about 5 minutes before baking the cake.
- Place the eggs in a large bowl. Mix for about 1 minute using a wire whisk.
- Add the yogurt, honey, coconut oil, and vanilla. Whisk until well combined and set it aside.
- Sift the almond flour, oat flour, baking powder, and salt in a medium bowl. Whisk to combine the dry ingredients and stir in the chocolate chips.
- Add the dry ingredients to the wet ingredients in two batches, stirring with a spatula after each addition until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for about 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely at room temperature.
For the Chocolate Frosting:
- Melt the chocolate using a double boiler or microwave in 30-second intervals, stirring until smooth.
- Add the peanut butter and stir until well combined.
- Let it set at room temperature or refrigerate for a few minutes, stirring occasionally until the desired consistency.
- Spread the chocolate frosting evenly on top of the cake.
