Ingredients
For the Crumb Mixture:
- 1 1/2 cups (150g) Oat flour
- 1/4 cup (50g) Granulated sugar*
- 1/2 tsp Ground cinnamon (optional)
- About 1/2 cup (125g) Natural peanut butter at room temperature
For the Filling:
- 4 medium bananas (very ripe)
- Chocolate chips (optional)
Instructions
- Grease a 10x6-inch (25x15 cm) rectangular baking dish with butter and set it aside. Alternatively, you can use an 8-inch (20 cm) round baking dish or cake pan.
- Preheat the oven to 350°F (180°C) for about 5 minutes before baking the cake.
- Combine the oat flour, sugar, and cinnamon in a large bowl. Stir to combine the dry ingredients.
- Add the peanut butter in two additions, and stir until the mixture becomes moist and crumbly. If the crumbs appear too dry, feel free to incorporate a bit more peanut butter. Set the mixture aside.
- *Note: If the bananas aren’t ripe and sweet enough, I suggest using 1/2 cup of sugar instead of 1/4 cup.
- Peel the bananas and slice them into rounds.
- Spread half of the crumb mixture at the base of the prepared baking dish. Arrange the banana rounds over the crumbs and sprinkle chocolate chips on top.
- Proceed by evenly spreading the remaining crumb mixture over the top and gently pressing it down with a spatula.
- Bake for 30-35 minutes or until golden brown.
- Allow it to cool completely to room temperature, then cut it into squares and serve. Enjoy!
