Ingredients:
  • 1 cup (240g) Natural Creamy Peanut Butter
  • 1/3 cup (67g) Brown Sugar
  • 1/3 cup (67g) Granulated Sugar
  • 1 Large Egg at room temperature
  • 1 tsp (5ml) Vanilla Extract
  • 1/2 cup (80g) Chocolate Chips

Directions:
  1. Line a large baking sheet with parchment paper. Set aside.
  2. Preheat the oven to 350°F (180°C).
  3. In a large bowl, place the peanut butter, brown sugar, white sugar, egg, and vanilla.
  4. Stir with a spatula. The mixture will thicken until it forms a soft dough.
  5. Stir in the chocolate chips.
  6. Roll the dough into 1-1/4 inches (3cm) balls and, using the bottom of a glass, lightly press each one to flatten them. It may be a little difficult to roll them into balls, so I suggest you portion the dough using a spoon or scoop and press it with your fingers and the palms of your hands. Press a few more chocolate chips on top.
  7. Place them onto the prepared baking sheet and bake for 10 to 15 minutes or until lightly brown around the edges.
  8. Let the cookies cool and set completely before removing them from the baking sheet.
  9. Store them in an airtight container at room temperature for up to a week.
