Ingredients:
- 1 cup (240g) Natural Creamy Peanut Butter
- 1/3 cup (67g) Brown Sugar
- 1/3 cup (67g) Granulated Sugar
- 1 Large Egg at room temperature
- 1 tsp (5ml) Vanilla Extract
- 1/2 cup (80g) Chocolate Chips

Directions:
- Line a large baking sheet with parchment paper. Set aside.
- Preheat the oven to 350°F (180°C).
- In a large bowl, place the peanut butter, brown sugar, white sugar, egg, and vanilla.
- Stir with a spatula. The mixture will thicken until it forms a soft dough.
- Stir in the chocolate chips.
- Roll the dough into 1-1/4 inches (3cm) balls and, using the bottom of a glass, lightly press each one to flatten them. It may be a little difficult to roll them into balls, so I suggest you portion the dough using a spoon or scoop and press it with your fingers and the palms of your hands. Press a few more chocolate chips on top.
- Place them onto the prepared baking sheet and bake for 10 to 15 minutes or until lightly brown around the edges.
- Let the cookies cool and set completely before removing them from the baking sheet.
- Store them in an airtight container at room temperature for up to a week.
