Flourless Chocolate Cake Snacks


Flourless chocolate cake snacks! Learn how to make these delicious flourless chocolate cake bites covered with chocolate and topped with sprinkles. A healthier alternative for an easy snack cake, perfect for lunch boxes, party snacks, or any other occasion!

Ingredients:
For the Cake:
  • 2 Eggs at room temperature
  • 1/2 tsp Vanilla extract
  • 1/4 cup (55g) Coconut oil or Melted butter
  • 1/4 cup (50g) Coconut sugar or Brown sugar (you can use 1/3 cup if you like a sweeter cake)
  • 1/4 cup (22g) Unsweetened cocoa powder
  • 1/2 tsp (2g) Baking powder
  • A pinch of salt
For the Chocolate Icing Shell:
  • 150g (about 1 cup) Tempered semi-sweet or milk chocolate (you can use compound chocolate if you don’t have practice tempering chocolate).
  • 1 or 2 tsp of Coconut oil (if your melted chocolate is too thick)
  • Chocolate sprinkles

Directions:
For the Cake:
  1. Line an 8x4in (20x10cm) loaf pan with parchment paper. You may double the recipe and use an 8x8in (20x20cm) square pan.
  2. Preheat the oven to 350°F (180°C) for about 5 minutes before baking the cake.
  3. Place the eggs and vanilla in a medium bowl and mix for about 1 minute using a wire whisk.
  4. Stir in coconut oil and coconut sugar.
  5. Sift the cocoa powder, baking powder, and salt over the mixture.
  6. Whisk until well combined and pour the batter into the prepared pan.
  7. Bake for about 8 to 10 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool to room temperature and cut it into 12 squares.
For the Chocolate Icing Shell:
  1. Melt the chocolate using a double boiler or microwave in 30-second intervals, stirring after each interval until smooth.
  2. If you are using couverture chocolate, you will have to temper the chocolate according to the package instructions.
  3. If you are using compound chocolate, you can use it right away, but you may need to use a bit of coconut oil to thin it out.
  4. Cover each square with melted chocolate and place them onto a sheet of parchment paper.
  5. Sprinkle some chocolate sprinkles on top.
  6. Allow the icing to set at room temperature or refrigerate until completely set.
