Ingredients:
For the Cake:
- 2 Eggs at room temperature
- 1/2 tsp Vanilla extract
- 1/4 cup (55g) Coconut oil or Melted butter
- 1/4 cup (50g) Coconut sugar or Brown sugar (you can use 1/3 cup if you like a sweeter cake)
- 1/4 cup (22g) Unsweetened cocoa powder
- 1/2 tsp (2g) Baking powder
- A pinch of salt
For the Chocolate Icing Shell:
- 150g (about 1 cup) Tempered semi-sweet or milk chocolate (you can use compound chocolate if you don’t have practice tempering chocolate).
- 1 or 2 tsp of Coconut oil (if your melted chocolate is too thick)
- Chocolate sprinkles

For the Cake:
- Line an 8x4in (20x10cm) loaf pan with parchment paper. You may double the recipe and use an 8x8in (20x20cm) square pan.
- Preheat the oven to 350°F (180°C) for about 5 minutes before baking the cake.
- Place the eggs and vanilla in a medium bowl and mix for about 1 minute using a wire whisk.
- Stir in coconut oil and coconut sugar.
- Sift the cocoa powder, baking powder, and salt over the mixture.
- Whisk until well combined and pour the batter into the prepared pan.
- Bake for about 8 to 10 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool to room temperature and cut it into 12 squares.
For the Chocolate Icing Shell:
- Melt the chocolate using a double boiler or microwave in 30-second intervals, stirring after each interval until smooth.
- If you are using couverture chocolate, you will have to temper the chocolate according to the package instructions.
- If you are using compound chocolate, you can use it right away, but you may need to use a bit of coconut oil to thin it out.
- Cover each square with melted chocolate and place them onto a sheet of parchment paper.
- Sprinkle some chocolate sprinkles on top.
- Allow the icing to set at room temperature or refrigerate until completely set.
