Ingredients:
Caramelized Bananas:
- 1/2 cup (100g) Sugar
- 2/3 cup (160g) Heavy Cream
- 2 Medium Bananas
Vanilla Pudding:
- 2 cups (480g) Whole Milk
- 4 Tbsp (30g) Cornstarch
- 1/4 cup (50g) Sugar
- 1 tsp Vanilla Extract

Caramelized Bananas:
- Heat the heavy cream until it just begins to simmer. Set aside.
- Place the sugar in a large saucepan. Stir over low heat until just melted.
- Add the warm heavy cream, about 1 tbsp at a time, stirring after each addition, until it forms a smooth caramel sauce. Be careful, as it will bubble vigorously, and sugar becomes extremely hot when melted!
- Turn off the heat. Peel the bananas and cut into 1/2” rounds. Place them into the caramel sauce and stir gently to coat. Let it cool completely at room temperature.
Vanilla Pudding:
- In a medium saucepan, off heat, whisk together milk, sugar, and cornstarch until completely dissolved.
- Bring to a boil over medium heat, whisking continuously until thickened, about 5 minutes.
- Turn off the heat, add vanilla extract and stir. Transfer the mixture to a heat-proof bowl and cover with plastic wrap directly on the surface of the pudding. Let it cool completely at room temperature.
Assembling:
- After cooled, whisk the pudding until smooth and divide 1/2 of it among four serving dishes. Top with a layer of caramelized bananas, another layer of pudding, and finish with caramelized bananas.
- Refrigerate for 30-40 minutes and serve.
