Egg-Free Lemon Mug Cake Recipe. An easy-to-make, soft and fluffy lemon cake, topped with a creamy and delicious lemon cream cheese frosting. A quick and easy dessert that takes only a few minutes to make!

Ingredients:
For the Cake:
  • 3 Tbsp (24g) All-Purpose Flour
  • 1/4 tsp (1g) Baking Powder
  • 2 Tbsp (25g) Granulated Sugar
  • A Pinch of Salt
  • 2 Tbsp (30ml) Milk
  • 1 Tbsp (15ml) Vegetable Oil
  • 2 tsp (10ml) Freshly Squeezed Lemon Juice

For the Frosting:
  • 2 Tbsp (30g) Cream Cheese at room temperature
  • 1 Tbsp (12,5g) Powdered Sugar
  • 1/2 tsp (2,5ml) Freshly Squeezed Lemon Juice

Directions:
For the cake:
  1. Mug: 7 fl. oz. (200ml).
  2. In a microwave-safe mug, place the flour, baking powder, sugar, and salt. Stir to combine.
  3. Add the milk, oil, and lemon juice. Stir until well combined.
  4. Microwave for 1min 10s or until a toothpick inserted in the center comes out clean. Microwave 10 seconds more, if necessary. Time may vary depending on the microwave.
  5. Let it cool at room temperature.
For the Frosting:
  1. In a small bowl, place the cream cheese, powdered sugar, and lemon juice. Stir until smooth.
  2. Spoon the frosting over the cake and sprinkle some lemon zest on top.
