Ingredients:
For the Cake:
- 3 Tbsp (24g) All-Purpose Flour
- 1/4 tsp (1g) Baking Powder
- 2 Tbsp (25g) Granulated Sugar
- A Pinch of Salt
- 2 Tbsp (30ml) Milk
- 1 Tbsp (15ml) Vegetable Oil
- 2 tsp (10ml) Freshly Squeezed Lemon Juice
For the Frosting:
- 2 Tbsp (30g) Cream Cheese at room temperature
- 1 Tbsp (12,5g) Powdered Sugar
- 1/2 tsp (2,5ml) Freshly Squeezed Lemon Juice

For the cake:
- Mug: 7 fl. oz. (200ml).
- In a microwave-safe mug, place the flour, baking powder, sugar, and salt. Stir to combine.
- Add the milk, oil, and lemon juice. Stir until well combined.
- Microwave for 1min 10s or until a toothpick inserted in the center comes out clean. Microwave 10 seconds more, if necessary. Time may vary depending on the microwave.
- Let it cool at room temperature.
For the Frosting:
- In a small bowl, place the cream cheese, powdered sugar, and lemon juice. Stir until smooth.
- Spoon the frosting over the cake and sprinkle some lemon zest on top.
