Egg-Free Chocolate Cookie Cake Recipe


Egg-free chocolate cookie cake recipe. A soft and delicious chocolate cake, made with only 3 ingredients, topped with a smooth vanilla cream cheese frosting. A quick and easy dessert, perfect for any occasion!

Ingredients:
For the Cake:
  • 32 Regular Oreo Cookies (with filling)
  • 1 cup (240ml) Milk
  • 2 tsp (8g) Baking Powder

For the Frosting:
  • 1/2 cup (113g) Unsalted Butter at room temperature
  • 1 cup (226g) Cream Cheese at room temperature
  • 1 cup (135g) Powdered Sugar
  • 1 tsp (5ml) Vanilla Extract
Decoration:
  • 8-10 Oreo Cookies

Directions:
For the Cake:
  1. Line a 7in (18cm) cake pan with parchment paper. You can use an 8-in round pan, but the cake will be too thin, and you might not be able to cut it into two layers.
  2. Preheat the oven to 350°F (180°C).
  3. In a blender, place the cookies (with filling) and milk. Blend until well combined and smooth.
  4. Add the baking powder and stir with a spatula.Do not overmix the baking powder, or it may lose its leavening power. You can blend quickly if the baking powder is lumpy.
  5. Pour the batter into the prepared pan and bake for about 25 minutes or until a toothpick inserted into the center comes out clean.
  6. Let it cool completely and cut the cake into two even layers.
For the Frosting:
  1. In the bowl of an electric mixer, beat the butter for a couple of minutes until light and smooth.
  2. Add the cream cheese and mix until well combined. Make sure it’s softened, or the frosting will become lumpy. I recommend the brick-style cream cheese, which is firmer than the spreadable one and will result in a thicker frosting.
  3. Add the powdered sugar and vanilla extract. Beat until smooth and creamy. The frosting won’t be so thick, but it will firm up in the fridge later. If you like sweeter frosting, you can add more sugar.
  4. Refrigerate the frosting, stirring every 15 minutes, until firm enough to spread over the cake.
  5. Place one layer of cake on a plate. Spread about 1/2 cup of frosting evenly over the top. Place the other cake layer on top, and spread a thin layer of frosting all over the cake.
  6. Pipe dollops of the remaining frosting over the cake using a piping bag fitted with a 1M tip. Decorate with 8 to 10 Oreo cookies cut in half.
  7. Keep the cake refrigerated until serving time.
