Ingredients
- 1 large egg at room temperature
- 3 Tbsp (37g) Granulated sugar
- 1 ripe medium banana
- 3 Tbsp (40g) Vegetable oil
- 2/3 cup (80g) All-purpose flour
- 1 tsp (4g) Baking powder
- A pinch of salt
- 1/3 cup (50g) Chocolate chips
Instructions
- Preheat oven to 350°F (180°C). Prepare a muffin tin with 6 paper liners.
- In a bowl, whisk together the egg and sugar for about 1 minute until well combined.
- Mash the ripe banana on a plate using a fork until smooth.
- Add the mashed banana to the egg-sugar mixture along with the vegetable oil. Mix until well combined.
- Sift the flour, baking powder, and salt into the wet ingredients. Gently mix until just combined. Do not overmix.
- Fold in the chocolate chips until evenly distributed throughout the batter.
- Divide the batter evenly among the paper liners, filling each about 2/3 full.
- Top each muffin with additional chocolate chips, if desired.
- Bake for about 15 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely to room temperature.
- Store the muffins in an airtight container at room temperature for up to two days.

If you want to make a larger batch, double the recipe to get 12 muffins.
