Easy-to-Make Banana Chocolate Chip Muffins

Ingredients

  • 1 large egg at room temperature
  • 3 Tbsp (37g) Granulated sugar
  • 1 ripe medium banana
  • 3 Tbsp (40g) Vegetable oil
  • 2/3 cup (80g) All-purpose flour
  • 1 tsp (4g) Baking powder
  • A pinch of salt
  • 1/3 cup (50g) Chocolate chips

Instructions

  1. Preheat oven to 350°F (180°C). Prepare a muffin tin with 6 paper liners.
  2. In a bowl, whisk together the egg and sugar for about 1 minute until well combined.
  3. Mash the ripe banana on a plate using a fork until smooth. 
  4. Add the mashed banana to the egg-sugar mixture along with the vegetable oil. Mix until well combined.
  5. Sift the flour, baking powder, and salt into the wet ingredients. Gently mix until just combined. Do not overmix.
  6. Fold in the chocolate chips until evenly distributed throughout the batter.
  7. Divide the batter evenly among the paper liners, filling each about 2/3 full. 
  8. Top each muffin with additional chocolate chips, if desired.
  9. Bake for about 15 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  10. Allow the muffins to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely to room temperature.
  11. Store the muffins in an airtight container at room temperature for up to two days.

Notes

If you want to make a larger batch, double the recipe to get 12 muffins.
