Dulce de Leche Sandwich Cookies


These Dulce de Leche Sandwich Cookies are delicious and super easy to make! They have a melt-in-your-mouth texture that combines perfectly with the sweet and creamy dulce de leche filling. So delicious!

Ingredients:
Cookie:
  • 2/3 cup (150g) Butter at room temperature
  • 1/2 cup (100g) Sugar
  • 1/2 tsp Almond or Vanilla Extract
  • 2 2/3 cups (280g) All-Purpose Flour
  • 1 Egg, lightly beaten with a fork
Filling:
  • 8oz (227g) Store-Bought Dulce de Leche

Directions:
  1. In a large bowl, place the butter, sugar, almond extract, and flour. Mix with a spatula or with your hands until it forms a crumbly mixture.
  2. Add the egg and mix until it forms a soft dough.
  3. Wrap the dough in plastic wrap and refrigerate for about 1 hour.
  4. Roll out the dough between two pieces of plastic wrap to 1/4 inch (6mm) thick.
  5. Cut out round shapes using a 2 1/2 inches (6cm) cookie cutter. Transfer them to a large baking sheet lined with parchment paper. Bake until slightly brown on the bottom, 15-18 minutes. Allow them to cool completely before removing from baking sheets.
  6. Place about one teaspoonful of dulce de leche onto the flat side of half the cookies. Place remaining cookies on top, and gently press each one to squeeze the filling to the edges.
  7. Coat the cookies with caster sugar or powdered sugar.

Store them in an airtight container at room temperature for up to a week.
