Ingredients
For the Custard:
- 2 1/2 cups (600g) Milk
- 1/2 cup (55g) Cornstarch
- 1 cup (300g) Sweetened condensed milk
- 1/2 tsp Vanilla extract
- 1/3 cup (50g) Semi-sweet chocolate, chopped or chips
For the Cookie Layers:
- About 300g of chocolate chip cookies (store-bought or homemade)
- About 3/4 cup (180g) Milk
For the Chocolate Ganache Topping:
- 2/3 cup (100g) Semi-sweet chocolate
- 1/2 cup (120g) Heavy cream (bring to room temperature)
- Chocolate chips (optional)
Instructions
For the Creme:
- Combine the milk and cornstarch in a saucepan off the heat. Mix until completely dissolved.
- Add the condensed milk and mix well.
- Cook over medium heat, stirring constantly for a few minutes until the mixture begins to thicken and bubble (vigorously mix when it starts to thicken to prevent lumps from forming). Reduce the heat to low and stir for another minute.
- Divide the custard into two bowls. Add the vanilla to the first bowl and the chocolate to the second. Stir well to combine. The heat from the custard will melt the chocolate.
Assembling the dessert:
- Quickly dip each cookie in milk and arrange them on the bottom of a 9x6-inch container (23x15cm), greased with vegetable oil or cooking spray.
- Spread the still-warm chocolate custard over the cookies.
- Make another layer of cookies, remembering to quickly moisten them in milk, and spread the vanilla custard on top.
- Make sure to use the custards while still warm so they can be spread more easily.
- Refrigerate for 2 to 3 hours until set.
For the chocolate ganache topping:
- Combine the chocolate chips and heavy cream in a bowl. Melt using a double boiler or microwave in 30-second intervals, stirring after each interval until smooth.
- Gently spread the chocolate ganache over the vanilla cream and sprinkle some chocolate chips on top to decorate.
Notes
Keep refrigerated until ready to serve or for up to 4 days.
