Ingredients
For the White Chocolate Custard:
- 2 cups (480g) Milk
- 1/2 cup (55g) Cornstarch
- 1 cup (300g) Sweetened condensed milk
- 1 tsp (5g) Vanilla extract
- 2/3 cup (100g) White chocolate, chopped or chips
- About 300g of seedless grapes, clean and dry*
- *or your preferred fruit (strawberries, mangoes, pitted fresh cherries, etc.)
For the Chocolate Ganache:
- 1 cup (160g) Milk chocolate (25-30% cocoa solids)
- 1/3 cup (80g) Heavy cream (bring to room temperature)
For the White Chocolate Drizzle:
- 35g (about 1/4 cup) White chocolate
- 1 or 2 tsp of Milk
Instructions
For the Creamy Custard:
- Dissolve the cornstarch in cold or room-temperature milk.
- Add the sweetened condensed milk and mix well.
- Cook over medium heat, stirring constantly and scraping the sides and bottom of the pan with a silicone spatula until the mixture begins to bubble and thicken. Reduce the heat to low and stir for one minute more.
- Turn off the heat and add the vanilla and white chocolate. Stir until completely melted.
- Transfer the custard to a bowl, cover it with plastic wrap in direct contact, and let it cool at room temperature.
Assembling the Dessert:
- Cut the grapes in half or prepare your preferred fruit.
- Arrange the grapes in a 9x6-inch (23x15cm) glass container, with the flat side facing outward.
- Place about 1/3 of the custard in the middle of the container, spreading it to the sides to keep the grapes in place.
- Arrange some grapes on top of the custard, then spread the remaining custard over everything, smoothing the top.
- Refrigerate for about 2 or 3 hours hours.
For the Chocolate Ganache:
- Combine the milk chocolate and heavy cream in a medium bowl.
- Microwave in 30-second intervals, stirring between each interval until completely melted.
- Pour the ganache over the chilled custard and spread it with a spatula to smooth it out.
For the White Chocolate Drizzle:
- Combine the white chocolate and 1 tsp of milk in a small bowl.
- Microwave in 20-second intervals, stirring until melted. You can add a bit more milk if necessary.
- Transfer the mixture to a small piping bag and drizzle over the chocolate ganache for decoration.
