Coconut Cake Donuts

Ingredients:
Cake:
  • 3 Eggs at room temperature
  • 1 1/4 cups (250g) Sugar
  • 2/3 cup (140g) Vegetable Oil
  • 3/4 cup (170g) Coconut Milk
  • 1 Tbsp White Vinegar or Lemon Juice
  • 2 1/4 cups (290g) All-Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
Topping:
  • 2/3 cup (60g) Shredded or Desiccated Coconut, unsweetened
Glaze:
  • 1 cup (120g) Powdered Sugar
  • About 1 1/2 Tbsp Coconut Milk

Cake:
  1. Grease a donut pan or silicone mold with butter. Set aside.
  2. Preheat the oven to 350°F (180°C).
  3. In the bowl of an electric mixer fitted with the whisk attachment, place the eggs and sugar. Beat on medium speed for about 2  minutes.
  4. Add the vegetable oil, coconut milk, and vinegar. Beat for 30 seconds until well combined.
  5. Sift the flour, baking powder, baking soda, and salt over the mixture. Stir gently until just combined. Do not overmix the flour.
  6. Using a piping bag, fill the prepared donut pan only half full.
  7. Bake for about 15 minutes or until a toothpick inserted in the center comes out clean.
  8. Wait five minutes, unmold the donuts and let them cool completely on a wire rack.
Toasted Coconut Topping:
  1. Place the coconut in a saucepan. Cook over low heat, stirring continuously for 1-2 minutes until golden brown. It happens very fast, so be careful not to burn the coconut. Let it cool completely.
Glaze:
  1. In a medium bowl, place the powdered sugar. Add the coconut milk a bit at a time, stirring after each addition, until it forms a glaze. Microwave it for 15 seconds to melt completely.
  2. Using a spoon, pour glaze over the donuts and immediately sprinkle toasted coconut before the glaze sets.
