Ingredients:
Cake:
- 3 Eggs at room temperature
- 1 1/4 cups (250g) Sugar
- 2/3 cup (140g) Vegetable Oil
- 3/4 cup (170g) Coconut Milk
- 1 Tbsp White Vinegar or Lemon Juice
- 2 1/4 cups (290g) All-Purpose Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1/4 tsp Salt
Topping:
- 2/3 cup (60g) Shredded or Desiccated Coconut, unsweetened
Glaze:
- 1 cup (120g) Powdered Sugar
- About 1 1/2 Tbsp Coconut Milk

Cake:
- Grease a donut pan or silicone mold with butter. Set aside.
- Preheat the oven to 350°F (180°C).
- In the bowl of an electric mixer fitted with the whisk attachment, place the eggs and sugar. Beat on medium speed for about 2 minutes.
- Add the vegetable oil, coconut milk, and vinegar. Beat for 30 seconds until well combined.
- Sift the flour, baking powder, baking soda, and salt over the mixture. Stir gently until just combined. Do not overmix the flour.
- Using a piping bag, fill the prepared donut pan only half full.
- Bake for about 15 minutes or until a toothpick inserted in the center comes out clean.
- Wait five minutes, unmold the donuts and let them cool completely on a wire rack.
Toasted Coconut Topping:
- Place the coconut in a saucepan. Cook over low heat, stirring continuously for 1-2 minutes until golden brown. It happens very fast, so be careful not to burn the coconut. Let it cool completely.
Glaze:
- In a medium bowl, place the powdered sugar. Add the coconut milk a bit at a time, stirring after each addition, until it forms a glaze. Microwave it for 15 seconds to melt completely.
- Using a spoon, pour glaze over the donuts and immediately sprinkle toasted coconut before the glaze sets.
