Chocolate Pudding Poke Cake Recipe. A soft and fluffy chocolate cake, topped with a rich and creamy chocolate pudding, made with heavy cream and semi-sweet or milk chocolate. So tasty and delicious!

Ingredients:
Cake:
- 1 cup (130g) All-Purpose Flour
- 1/4 cup (25g) Unsweetened Cocoa Powder
- 1/2 cup (100g) Brown or White Sugar
- 1 tsp (4g) Baking Powder
- 1/4 tsp Salt
- 2 Eggs at room temperature
- 1/3 cup (80ml) Vegetable Oil
- 1/2 cup (120ml) Milk at room temperature
- 1 tsp (5ml) Vinegar or Lemon Juice
- 1/2 tsp (2,5ml) Vanilla Extract
Chocolate Pudding:
- 1 cup (240ml) Milk
- 1/4 cup (30g) Cornstarch
- 1/3 cup (65g) White Sugar
- 1 1/2 cups (360ml) Heavy Cream
- 1/2 tsp (2,5ml) Vanilla Extract
- 6oz (170g) Semi-Sweet or Milk Chocolate, finely chopped
Directions:
Cake:
- Grease with butter or cooking spray an 8in (20cm) square baking dish or pan. Set aside.
- Preheat the oven to 350°F (180°C).
- In a large bowl, sift the flour, cocoa powder, sugar, baking powder, and salt. Whisk to combine the dry ingredients.
- Add the eggs, oil, milk, vinegar, and vanilla. Whisk until just combined. Do not overmix the flour.
- Pour the batter into the prepared baking dish and bake for about 15 to 20 minutes or until a toothpick inserted in the center comes out clean. Let it cool at room temperature.

Chocolate Pudding:
- In a medium saucepan, place the milk and cornstarch. Dissolve the cornstarch in cold milk to avoid any lumps.
- Add the sugar and heavy cream. Bring to a boil over medium heat, stirring continuously until thickened, about 5 to 7 minutes.
- Turn off the heat. Add the chopped chocolate and vanilla. Stir until combined (the chocolate will melt into the hot mixture).
- Using the bottom of a wooden spoon or spatula, poke holes all over the cake and spread the chocolate cream while still hot.
- Refrigerate for 2 hours, sprinkle chocolate shavings on top and serve.
