Chocolate Pudding Poke Cake Recipe


Chocolate Pudding Poke Cake Recipe. A soft and fluffy chocolate cake, topped with a rich and creamy chocolate pudding, made with heavy cream and semi-sweet or milk chocolate. So tasty and delicious!

Ingredients:
Cake:
  • 1 cup (130g) All-Purpose Flour
  • 1/4 cup (25g) Unsweetened Cocoa Powder
  • 1/2 cup (100g) Brown or White Sugar
  • 1 tsp (4g) Baking Powder
  • 1/4 tsp Salt
  • 2 Eggs at room temperature
  • 1/3 cup (80ml) Vegetable Oil
  • 1/2 cup (120ml) Milk at room temperature
  • 1 tsp (5ml) Vinegar or Lemon Juice
  • 1/2 tsp (2,5ml) Vanilla Extract

Chocolate Pudding:
  • 1 cup (240ml) Milk
  • 1/4 cup (30g) Cornstarch
  • 1/3 cup (65g) White Sugar
  • 1 1/2 cups (360ml) Heavy Cream
  • 1/2 tsp (2,5ml) Vanilla Extract
  • 6oz (170g) Semi-Sweet or Milk Chocolate, finely chopped
Directions:
Cake:
  1. Grease with butter or cooking spray an 8in (20cm) square baking dish or pan. Set aside.
  2. Preheat the oven to 350°F (180°C).
  3. In a large bowl, sift the flour, cocoa powder, sugar, baking powder, and salt. Whisk to combine the dry ingredients.
  4. Add the eggs, oil, milk, vinegar, and vanilla. Whisk until just combined. Do not overmix the flour.
  5. Pour the batter into the prepared baking dish and bake for about 15 to 20 minutes or until a toothpick inserted in the center comes out clean. Let it cool at room temperature.

Chocolate Pudding:
  1. In a medium saucepan, place the milk and cornstarch. Dissolve the cornstarch in cold milk to avoid any lumps.
  2. Add the sugar and heavy cream. Bring to a boil over medium heat, stirring continuously until thickened, about 5 to 7 minutes.
  3. Turn off the heat. Add the chopped chocolate and vanilla. Stir until combined (the chocolate will melt into the hot mixture).
  4. Using the bottom of a wooden spoon or spatula, poke holes all over the cake and spread the chocolate cream while still hot.
  5. Refrigerate for 2 hours, sprinkle chocolate shavings on top and serve.
