Directions:
Base:
- Line an 8x8in (20x20cm) baking pan with parchment paper, leaving enough overhang to act as handles and easy-lift the fudge out of the pan. Set aside.
- In a medium bowl, place the chopped chocolate and butter. Microwave in 30-second intervals, stirring after each until melted. Set aside.
- Place the roasted peanuts in the bowl of a food processor and pulse until the peanuts are finely and evenly ground. Make sure not to overprocess, or they will become oily.
- Add the melted chocolate mixture and pulse until well combined.
- Immediately press the crumbs evenly on the bottom of the prepared pan.
- Refrigerate the crust for about 20 minutes.
Fudge:
- In a large bowl, place the chopped chocolate and sweetened condensed milk.
- Microwave in 40-seconds intervals, stirring after each until smooth.
- Spread the fudge quickly over the crust before it starts to set.
- Sprinkle roasted peanuts on top and press them a little to make sure they stick to the fudge.
- Let it stand at room temperature for about 2 hours to set. If it is a hot day, you can put the fudge in the fridge for 15-20 minutes or until firm enough to cut.
- Using the parchment paper as handles, lift the fudge out of the pan and cut into squares.
- Store them in an airtight container at room temperature to maintain its creamy texture.
