These chocolate covered bite-sized key lime pie squares are the perfect combination between tart and sweet.

Ingredients:
Crust:
  • 5oz (140g) Graham Crackers 
  • 1/3 cup (70g) Butter, melted
Key Lime Filling:
  • 14oz (396g) Sweetened Condensed Milk
  • 3 Egg Yolks
  • 1/2 cup (125ml) Key Lime Juice (pure, no water, no sugar)
Coating:
  • 9oz (300g) Milk Chocolate

Instructions:
Crust:
  1. Line an 8-inch (20cm) square baking pan with parchment paper.
  2. In a food processor, pulse cookies until finely ground. Add melted butter and pulse until combined.
  3. Firmly press crumb mixture into bottom of the prepared pan. Set aside.
Filling:
  1. Preheat the oven to 350°F (180°C).
  2. In a large bowl, place the sweetened condensed milk and egg yolks. Stir until smooth.
  3. Add the key lime juice and stir until well combined. Pour over crust.
  4. Cover the baking pan with foil and Bake at 350°F (180°C) for 20-25 minutes or until center is set.
  5. Refrigerate for about 3 hours.

Coating:
  1. Melt the chocolate in a double boiler or microwave at medium power, stopping to stir every 40 seconds.
  2. Cut pie into 1-1/4-inch (3cm) squares.
  3. Completely dip squares, one at a time, in melted chocolate; allow excess to drip off. Place on a baking sheet lined with parchment paper.
  4. Refrigerate for 10-15 minutes or until serving time.

Makes about 40.

Store in an airtight container in the refrigerator for up to 1 week.
