Chocolate-Covered Key Lime Pie Bites

Ingredients:
Crust:
- 5oz (140g) Graham Crackers
- 1/3 cup (70g) Butter, melted
Key Lime Filling:
- 14oz (396g) Sweetened Condensed Milk
- 3 Egg Yolks
- 1/2 cup (125ml) Key Lime Juice (pure, no water, no sugar)
Coating:
- 9oz (300g) Milk Chocolate

Crust:
- Line an 8-inch (20cm) square baking pan with parchment paper.
- In a food processor, pulse cookies until finely ground. Add melted butter and pulse until combined.
- Firmly press crumb mixture into bottom of the prepared pan. Set aside.
Filling:
- Preheat the oven to 350°F (180°C).
- In a large bowl, place the sweetened condensed milk and egg yolks. Stir until smooth.
- Add the key lime juice and stir until well combined. Pour over crust.
- Cover the baking pan with foil and Bake at 350°F (180°C) for 20-25 minutes or until center is set.
- Refrigerate for about 3 hours.
Coating:
- Melt the chocolate in a double boiler or microwave at medium power, stopping to stir every 40 seconds.
- Cut pie into 1-1/4-inch (3cm) squares.
- Completely dip squares, one at a time, in melted chocolate; allow excess to drip off. Place on a baking sheet lined with parchment paper.
- Refrigerate for 10-15 minutes or until serving time.
Makes about 40.
Store in an airtight container in the refrigerator for up to 1 week.
