Apple Pie Layer Cake

Ingredients:
For the Vanilla Cake:
  • 1 3/4 cups (210g) All-purpose flour
  • 2 tsp (8g) Baking powder
  • 1/4 tsp (1g) Salt
  • 2/3 cup (150g) Unsalted butter at room temperature (softened)
  • 3/4 cup (150g) Granulated sugar
  • 3 Large eggs at room temperature
  • 1 tsp (5g) Vanilla Extract
  • 3/4 cup (180g) Buttermilk at room temperature (or homemade buttermilk: 3/4 cup milk + 1 Tbsp (15g) Vinegar or lemon juice)

For the Apple Filling:
  • 1/3 cup (80g) Water
  • 1 Tbsp (8g) Cornstarch
  • 480g (about 4 cups) Apples (peeled, cored, and diced)
  • 1/2 cup (100g) Granulated sugar
  • 1 Tbsp (15g) Lemon juice
  • 1/2 tsp Ground cinnamon (optional)
For the Vanilla Custard:
  • 1 cup (240g) of Milk
  • 1/4 cup (30g) Cornstarch
  • 1 cup (240g) Heavy Cream
  • 1/3 cup (66g) Granulated Sugar
  • 1 tsp (5g) Vanilla Extract
  • 100g (about 2/3 cup) White Chocolate (chopped or chips)
For the Whipped Cream Frosting:
  • 1 1/4 cups (300g) Heavy cream, cold (about 35% milk fat)
  • 1/2 cup (50g) Whole milk powder (it helps to stabilize the whipped cream)
  • 3 Tbsp (25g) Powdered sugar
  • 1/2 tsp Vanilla Extract

Instructions:
For the Cake:
  1. Line an 8in (20cm) round pan with parchment paper. Set it aside. Make sure to use a deep cake pan (about 3in or 7,5cm deep).
  2. Preheat the oven to 350°F (180°C) for about 5 minutes before baking the cake.
  3. Sift the flour, baking powder, and salt in a large bowl. Stir to combine the dry ingredients. Set it aside.
  4. Cream the butter and sugar until light and creamy.
  5. Add the vanilla and eggs, one at a time, beating after each addition until well combined.
  6. Mix in the dry ingredients in three batches, alternating with two additions of buttermilk. Make sure to mix just for a few seconds. Don’t overmix the batter. Otherwise, the flour will develop gluten, and the cake will be dense.
  7. Spread the batter into the prepared pan and smooth the top.
  8. Bake for about 35 – 45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let it cool completely to room temperature.
For the Apple Filling:
  1. In a small bowl, combine the water and cornstarch. Stir until well dissolved. Set it aside.
  2. Combine the apples, sugar, lemon juice, and cinnamon in a saucepan. Cook over medium heat, stirring occasionally, until the apples are soft.
  3. Pour the cornstarch mixture over the apples and quickly stir for about 1 minute until the liquid thickens. Note: the cornstarch may sink to the bottom, so make sure to stir the mixture before pouring it over the apples.
  4. Let it cool at room temperature while making the vanilla custard.
For the Vanilla Custard:
  1. In a large saucepan, place the milk and cornstarch. Dissolve the cornstarch completely in cold milk to prevent lumps.
  2. Add the heavy cream and granulated sugar. Stir continuously over medium heat until the mixture starts to bubble and thicken. Turn the heat to low and keep stirring for two more minutes.
  3. Turn off the heat; add the vanilla and chopped chocolate. Stir until smooth. The heat of the mixture will melt the chocolate. The cornstarch and chocolate will help firm up the filling in the fridge, so make sure not to skip these ingredients.
  4. Cover with a plastic wrap in direct contact and let it cool at room temperature.
Assembling the Cake:
  1. Level the top of the cake if necessary.
  2. Cut the cake into three rounds.
  3. Place the first layer onto a serving plate. Spread half of the custard evenly over the cake and place half of the apple filling on top. Repeat the process.
  4. Refrigerate for about 2 hours.
For the Whipped Cream Frosting:
  1. Combine the heavy cream, whole milk powder, powdered sugar, and vanilla in the bowl of an electric mixer.
  2. Beat on medium speed until stiff peaks form. Don’t overmix (otherwise, the cream will become buttery).
