Ingredients
For the Muffins:
- 1 large egg at room temperature
- 1/2 cup (120g) Milk at room temperature
- 1/3 cup (75g) Vegetable oil
- 1 tsp (5g) Vanilla extract
- 1 3/4 cups (210g) All-purpose flour
- 3/4 cup (150g) Granulated sugar
- 2 tsp (8g) Baking powder
- 1/4 tsp (1g) Salt
- 1 large apple
For the Crumble:
- 1/4 cup (30g) All-purpose flour
- 1/4 cup (50g) Granulated sugar
- 1/4 tsp of Cinnamon (optional)
- 2 Tbsp (28g) Unsalted butter at room temperature
- 3 Tbsp of White chocolate chips
Instructions
For the Crumble:
- Combine the flour, sugar, and cinnamon in a medium bowl. Stir to combine the dry ingredients.
- Add the butter and mix everything, pressing the softened butter and mixing with a fork until it forms a crumbly mixture.
- Stir in the white chocolate chips. Set it aside.
For the Muffins:
- Line a muffin pan with 12 paper liners and set it aside.
- Preheat the oven to 350°F (180°C).
- Crack the egg in a medium bowl and mix using a wire whisk or a fork for about 1 minute.
- Add the milk, vegetable oil, and vanilla. Whisk until well combined and set aside.
- Sift the flour, sugar, baking powder, and salt in a large bowl. Stir the dry ingredients to combine and set aside.
- Peel the apple, remove the core, and cut it into small pieces. Make sure to prepare the apple just before adding it to the batter (to prevent it from turning brown).
- Pour the wet ingredients over the dry ingredients mixture and gently stir with a spatula until just combined. Don’t overmix the batter.
- Add the diced apple and stir to combine.
- Fill the paper liners about 2/3 full with batter and sprinkle the crumble over each muffin.
- Bake for about 20 - 25 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for about 5 minutes in the pan and transfer them to a cooling rack to cool completely at room temperature.
