Ingredients:
For the Cake:
- 1/4 cup (30g) + 2 tsp (8g) All-Purpose Flour
- 2 Tbsp (25g) Sugar
- 1/2 tsp (2g) Baking Powder
- 1/4 tsp Ground Cinnamon
- 3 Tbsp (45ml) Milk
- 1 Tbsp (15ml) Vegetable Oil
- 1/4 tsp Vanilla Extract
- 1/4 cup Apple – peeled, cored and diced
- 1/4 tsp Vinegar or Lemon Juice
For the Sugar Glaze (optional):
- 2 Tbsp (14g) Powdered (icing) Sugar
- About 1 tsp Milk

Cake:
- Mug size: 8oz (240ml) or larger to avoid overflowing.
- In a mug, place 1/4 cup of flour, sugar, baking powder, and cinnamon. Whisk to combine.
- Add the milk, vegetable oil, and vanilla. Stir until well combined. Set aside.
- Peel, core, and dice an apple. Measure 1/4 cup of the chopped apple and place it in a small bowl.
- Add the vinegar and 2 teaspoons of flour. Stir to coat the apple chunks.
- Stir the chopped apple into the batter.
- Microwave for 1m30s or until a toothpick inserted in the center comes out clean.
Sugar Glaze (optional):
- In a small bowl, place the powdered sugar and milk. Stir until it forms a smooth and fluid glaze.
- Using a fork, toothpick or skewer, poke holes all over the cake and pour the sugar glaze on top.
- Sprinkle some ground cinnamon and serve while still warm.
