Ingredients:
- 150g (about 1 cup)Â Semi-Sweet or Milk Chocolate, chopped
- 240g (1 cup) Heavy Cream
- About 15-18 Plain Maria Cookies
- 80g (1/3 cup) Heavy Cream (to dip the cookies)
- Chocolate shavings and whipped heavy cream for decoration (optional)

- In a medium bowl, place the chocolate and 1 cup of heavy cream. Melt using a double boiler or microwave in 30-second intervals, stirring after each until smooth. Note: The consistency of the ganache may vary depending on the type of chocolate you use. The ganache made with milk chocolate will be softer than the one made with semi-sweet chocolate.
- I used plain round Maria cookies, about the same diameter as the ramekins (capacity: 5fl.oz or 150ml). You can break the cookies into smaller pieces if they are not the same size as the container you are using.
- To assemble this dessert, quickly deep the cookies in heavy cream (one at a time, so they don’t become soggy) and place them onto the bottom of each ramekin.
- Then spread about 1 tablespoon of ganache on top of the cookies. Repeat this process until they reach 6 layers (finishing with ganache).
- Sprinkle chocolate shavings on top and decorate with whipped heavy cream (optional).
- Refrigerate for at least 2 hours.
