This tangy, light, and delicious 3-ingredient lemon mousse is the perfect dessert for spring/summer. Made with white chocolate, freshly squeezed lemon juice, and whipped cream, this dessert is egg-free and super easy to make!

Ingredients:
- 8oz (227g) Good Quality White Chocolate, chopped
- 1/3 cup (80ml) Freshly Squeezed Lemon Juice at room temperature
- 1 cup (240ml) Heavy Whipping Cream, cold

Directions:
- Melt the chocolate using a double-boiler or microwave in 20-second intervals, stirring between each, until melted.
- Add the lemon juice and whisk vigorously until smooth. Refrigerate for 20-30 minutes.
- In the bowl of an electric mixer, beat the whipping cream on medium-high speed until soft peaks form, being careful not to overbeat or the cream will turn buttery.
- Gently fold the whipped cream into the chocolate mixture.
- Spoon the mousse into serving dishes, refrigerate for about 2 hours and serve.
- Store in the fridge for up to 3 days.
