Ingredients

  • 200g (about 1 1/4 cups) White chocolate, chopped or chips
  • 3 Tbsp (45g) Full-fat coconut milk at room temperature
  • 1/3 cup Desiccated or Finely Shredded coconut

Instructions

  1. Melt the white chocolate using a double boiler or microwave in 30-second intervals, stirring until smooth. 
  2. Add the coconut milk and stir until well combined. 
  3. Refrigerate for about 20-30 minutes or until firm enough to roll into balls. You can transfer the mixture to a larger container to cool down quickly. 
  4. Portion the dough using one heaping teaspoon and roll it using the palms of your hands.
  5. Coat the truffles with coconut. 

Notes

Keep refrigerated until serving time, especially on hot days.
