Ingredients:
  • 250g (about 3 cups) Chocolate Cake Crumbs (homemade or store-bought)
  • 2/3 cup (95g) Semi-Sweet or Milk Chocolate, chopped
  • 3 Tbsp (45g) Heavy Cream (plus 1 or 2 Tbsp, if necessary)
  • 40g (about 1/3 cup) Chocolate Shavings

Directions:
  1. In a medium bowl, place the chopped chocolate and heavy cream. Microwave in 30-second intervals, stirring after each until melted. Set aside.
  2. Using your hands, crumble the cake into fine crumbs. Place 250g or 3 cups of cake crumbs into a large bowl.
  3. Pour the chocolate mixture on top and stir with a spatula until it forms a soft dough. If the dough is too dry, you can add one or two tablespoons of heavy cream.
  4. Refrigerate for about 20 minutes or until firm enough to roll into balls.
  5. Portion the dough using a tablespoon-size scoop and roll the dough into balls using the palms of your hands.
  6. Roll them in chocolate shavings to coat.
  7. Keep refrigerated in an airtight container and remove from the fridge about 20 minutes before serving.
