Directions:
- Line an 8-inch (20cm) square pan with parchment paper. Set it aside.
- Preheat the oven to 350°F (180°C) for about 5 minutes before baking the cake.
- Melt the chocolate using a double boiler or microwave in 30-second intervals, stirring after each until smooth. Set it aside at room temperature until slightly warm.
- Place the eggs whites in the bowl of an electric mixer fitted with the whisk attachment. Beat on medium speed until soft peaks form.
- Add the egg yolks, one at a time, beating a few minutes more until fluffy and pale yellow.
- Pour the melted chocolate into the mixture and mix until well combined using a wire whisk. Note: make sure to use room temperature eggs. Otherwise, the chocolate will harden and not mix properly with the eggs.
- Pour the batter into the prepared pan and bake for about 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Important: the cake will rise to the top and deflate as it cools.
- Let it cool completely at room temperature. Cut into squares and serve. Ps: the cake tastes even better when combined with a scoop of ice cream!
- If not consumed on the same day, keep the cake refrigerated for up to 5 days. Remove from the fridge about 30 minutes before serving.
